Eggs with Legs Breakfast Board

I’ve had trouble writing lately. I stare at my blank screen and the words escape me because I feel so terrible inside. I’ve hesitated to talk about my personal things here because I really wanted to keep Ghoul at Heart fun and lighthearted, but these last three years have been so brutal on me emotionally, because of my mom’s long illness with COPD, I feel like I need to at least acknowledge that the stress and sadness has affected my ability to work, create, and feel joyful about my work. So I hope you’ll bare with me as my ideas may not be posting as fast as before, but I have the recipes in the pipeline its just taking me a bit longer to work  through them.

That being said, I had two days where the creativity really started to flow and I was able to create this beautiful Eggs with Legs Breakfast Board. It’s filled with lots of spider themed breakfast ideas that pairs perfectly with my Spider Garden tablescape (pictured below) which I created with inspiration from Cheers with Chelsea’s love of spiders.

Eggs with Legs Breakfast Board

Take a bite-sized stroll through a Spring-o-ween feast tangled in spiderweb eggs, bagels, and avocado toast. This spooky and elegant board serves up eerie Eggs with Legs, creepy crawly fruit spiders and festive breakfast treats perfect for a Halloween brunch or any morning that you want breakfast with a bite.

Ingredients

  • 6 eggs
  • green food coloring
  • boxed muffin mix (prepared) (I used poppy seed muffins)
  • moss green gel food coloring
  • 6 mini bagels, sliced
  • 2 packages cream cheese
  • 6 slices white bread
  • 1 qt egg whites
  • 2 tbsp prepared pesto
  • cooking spray
  • green grapes
  • blackberries
  • avocado
  • kiwis
  • mixed greens and basil (garnish)

Instructions

Spiderweb Eggs

  • Make a day ahead. Place eggs in a single layer in a pot and cover with enough cold water so that the water is about an inch above the eggs. Heat pot and bring to a boil. Once water begins to boil, boil the eggs for 2 minutes. (set a timer) Turn off heat and let eggs sit in the hot water for 15 minutes. (set a timer) Pour off hot water and replace with cold water, letting it overflow in the sink to cool down the pot and the eggs. Let sit in the cool water for a few minutes. Use the back of a spoon to gently tap each egg all over to create spiderweb breaks in the shell. Return cracked eggs to the water and add green food coloring to the water. Refrigerate the eggs overnight to allow the food coloring to penetrate the broken shells and dye the whites in a spider pattern. Peel eggs and refrigerate until ready to serve.

Spider Muffins

  • Make a day ahead. Prepare muffin mix according to package instructions. Spray a small silicone spider mold with cooking spray and fill mold half way full. Bake 350℉ for about 20 minutes. Cool and turn out spiders onto a wire rack to cool completely.
    Fill 8 cupcake liners ¾ full with batter. Add a small amount of moss food coloring to the remaining batter and fill 2 cupcake liners with the green batter. Bake according to package directions. Cool competely
    Crumble the two green muffins into a shallow bowl. Melt butter and brush the top of a regular muffin and sprinkle with green crumbles to resemble moss then add a spider muffin on top of the moss.

Bagels with webbed Cream Cheese

  • Make cream cheese webs a day before. Roll out cream cheese between two sheets of parchment paper to ¼ thickness. Pop into the freezer for 20 minutes. remove from freezer and use an embossed spider web cookie cutter to cut out 6-8 webs. Re-rolling the cream cheese just like you would with cookie dough. Use a spatula to carefully transfer the cream cheese webs to another parchment lined baking sheet and freeze completely.
    When ready to serve, simply place the frozen cream cheese webs onto sliced mini bagels and top with a realistic looking spider cupcake topper.

Spiderweb Toast (Spooky Toast)

  • There are two ways to make this toast using a mini web waffle maker.
    1. Place a slice of bread in the waffle maker and heat until toasted, like you would a waffle. Results: Thin toast with light webs and toasted background.
    2. Spooky Toast Heat waffle maker and then place a slice of bread on the mini spiderweb waffle maker. Lower the lid and press down for 5 seconds to create an imprint of the waffle maker image. Remove bread and toast as usual. Results: Toasted webs with light background.

Eggs with Legs

  • Preheat oven to 350℉ and spray three small silicone spider mold with cooking spray and place onto a baking sheet. Pour egg whites into mold. Bake for 15 -18 minutes. Cool slightly and turn out onto parchment paper. Pour remaining egg whites into a bowl and stir in prepared pesto. Heat skillet with butter or oil and scramble eggs. Pour into a serving bowl and top with spider eggs. Serve immediately. Garnish with basil leaves.

Assembly

  • Cover a large round platter with mixed greens. Place hardboiled eggs around the outside edge. Next place the toast and the bagels on a rectangular plate. Place the bowl of scrambled Eggs with Legs and then fill in with muffins, berry spiders, green grapes, kiwis and garnish with basil leaves.
