When vampires rise and bats are seen, the moon laughs and whispers… it’s Halloween. Our vampire theme continues with Full Moon Martinis. No party is complete without a signature drink to set the mood and kick off the evening. This elegant cocktail begins with a dreamy coconut cream ice moon which bathes its moonglow in mango flavored vodka. It’s made extra special with a simple bat garnish made with grape flavored fruit leather. An easy and festive cocktail to sip and savor…and watch the storm clouds form as the moon melts. Enjoy!

Full Moon Martini

An elegant cocktail made with a coconut cream moon bathed in mango flavored vodka with a simple bat garnish made of fruit leather.

Ingredients

  • 1 cup coconut cream, sweetened
  • 1 cup water
  • 1-2 rolls fruit leather (grape) (1 roll makes ~6 bats)
  • 6-8 oz mango flavored vodka (or substitute with pineapple flavored rum)

Equipment needed

  • 1 round ice cube mold *See recipe notes for where to get one
  • 1 small bat cookie cutter

Instructions

Moon Ice Cubes

  • Whisk together the coconut cream and water until smooth. Carefully fill up a round ice cube mold and freeze over night.

Bat Garnish

  • Unroll and remove the plastic backing from the grape flavored fruit leather, and place it shiny side up on a cutting board. Fold in half so that the shiny side sticks to itself creating a double layer of fruit leather. Press a bat cookie cutter into the fruit leather. But rather than trying to muscle the cookie cutter through the top of the fruit, flip over the fruit leather and cookie cutter together. Working from the back side, use your fingertips to push the fruit leather through the cutter to ensure the cuts are clean and go all the way through.
  • Repeat. 1 fruit roll up makes ~6 bats that can be placed on the center of the moon as a quick and easy garnish for each martini.
  • Bat picks (optional): To make bat picks, you'll need to make 2 more bats from another fruit roll up to give you a total of 8 bat cutouts. Take two bats and sandwich a toothpick between them using a dab of jam as glue. Repeat with the remaining bats until you get 4 bat picks.

Assemble drinks

  • Add moons to martini glasses and add 1 to 2oz of mango flavored vodka (or substitute with pineapple flavored rum) to each glass depending on the size of glass. Let cocktails sit for a spell to allow for the coconut moon to melt and flavor the vodka or rum. Top with bats before serving. Serve and sip slowly.
