Candy Corn Caprese

Not all Halloween food requires days of prep and extra tools and equipment to make. Sometimes all you need is a few choice ingredients that are easy to come by, like tomatoes! When I saw some yellow and orange tomatoes, I couldn’t resist making these super simple Candy Corn Caprese bites for our Candy Corn themed menu. I spent a little time cutting them in order to make them bite sized but seriously this is not necessary, simply skewer the whole tomatoes with a mozzarella ball and serve them on a bed of basil leaves with balsamic glaze and call it a day. Easy Breezy! Happy Halloween!

I experimented in cutting the yellow tomatoes lengthwise to create a wider base to mimic candy corn. 😉

Candy Corn Caprese

Make some Candy Corn Caprese bites with sweet yellow and orange tomatoes, fresh mozzarella, and lots of basil for a quick and easy Halloween appetizer.

Ingredients

  • 1 pint yellow grape tomatoes
  • 1 pint orange grape tomatoes
  • 8 oz. mozzarella cheese (pearls or cherry size)
  • basil leaves
  • ½ cup bottled balsamic glaze
  • salt and pepper (to taste)

Instructions

  • Smallest Bites: Cut yellow tomato in half, cut top and bottom off of orange tomato and skewer with a toothpick. Add small mozzarella pearl to the top and wrap with a basil leaf. Serve with Balsamic glaze on the side.
    (Note, my cheese pearls were a bit odd shaped from the packaging so I heated them for 2-3 minutes in a 350 degree oven to round out their shape.)
  • Easy-breezy way: Add whole yellow and orange tomatoes and a whole fresh mozzarella ball to a toothpick and place on a bed of basil leaves. Serve with Balsamic glaze on the side.
