Candy Corn Cupcakes

Our Candy Corn themed menu inspired by Spooky Little Halloween magazines continues with the easiest of all baked desserts….Cupcakes! Cupcakes are the ideal choice to make a festive Halloween dessert in a pinch especially if you have a box cake, ready made frosting, and Halloween sprinkles in your cupboard. Not to worry if you don’t have those items because this recipe is better not only because it’s homemade, but because it only makes 1 dozen cupcakes. It’s the perfect amount of dessert for a mellow Halloween evening at home and they bake up in about 20 minutes. The only bit of decorating is a few drops of yellow and orange food coloring added to frosting to make these super cute and festive Candy Corn cupcakes. Enjoy!

Candy Corn Cupcakes

Don't spend all night in the kitchen, whip up a small batch of Candy Corn Cupcakes for a quick and easy treat to sweeten up Halloween.

Equipment

  • stand mixer or hand mixer

Ingredients

Vanilla Cupcakes

  • 1⅓ cups all purpose flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • ½ cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • ½ cup buttermilk
  • tsp. vanilla extract

Vanilla Buttercream

  • 1 cup butter, salted, room temperature
  • 5 cups powdered sugar, sifted
  • 1 tbsp. vanilla extract
  • 2 tbsp. whipping cream
  • orange and yellow gel food coloring

Instructions

  • Preheat oven to 350° and line cupcake pan with cupcake liners and set aside.
  • Combine dry ingredients in a large bowl. Whisk in the rest of the ingredients until combined. Fill cupcake liners ⅔ full and bake at 350° for 15-18 minutes. Allow to cool completely before frosting.

Buttercream Frosting

  • Place butter in a stand mixer with paddle attachment and slowly add sifted powdered sugar beating at medium speed until the sugar is incorporated and fluffy. Add vanilla and whipping cream and mix until incorporated.
    Transfer ¼ cup white frosting into a piping bag and set aside.
    Transfer 1 cup of white frosting aside in a medium bowl and add orange gel food coloring until the desired shade of orange is reached. Transfer to a piping bag and set aside.
    To the remaining frosting in the mixer bowl, add yellow gel food coloring and mix until desired shade of yellow is reached. Transfer to a piping bag and set aside.
  • Frost cupcakes: Pipe a ring of yellow buttercream frosting onto each cupcake, Then add a small orange ring of frosting and finish with a small dot of white frosting at the top. Enjoy!
