I don’t know if you’ve ever made cookies with cookie molds before but they are seriously the best thing ever invented! Especially these molds from Artesao Cookie Molds. I am not good at decorating cookies with royal icing. I watch countless cookie decorating videos of folks decorating these elaborate and beautiful cookies with icing and when I try doing it, my cookies are a total disaster. Well…Cookie molds do all the hard work so all that’s left to do is embellish.  I had a ton of fun making these Ghoultide Goodies using Christmas and Halloween molds.  I used the Hangable Skull mold to make some Abominable Snow Misers, and I used the Stacked Jack-o-lantern mold to make these adorable Jack Frosty the Snowmen, along with decorating a Christmas tree mold with edible wafer paper snowflakes and fondant bats for a festive Oh Creepmas Tree Cookie. These were so much fun to make, the hard part was deciding how to decorate them because the possibilities are endless.

Ingredients

Chocolate Sugar Cookies

  • 1 cup butter, salted room temperature
  • 1 cup sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • cups all purpose flour
  • ½ cup dark cocoa powder
  • tsp. cinnamon
  • ½ tsp. salt

Sugar Cookies

  • ¾ cup butter, salted
  • ¾ cup sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • cups all purpose flour
  • 1 tsp. baking spice, or substitute with cinnamon
  • ½ tsp. salt
  • red food coloring (optional)

Meringue Paint

  • 1 tsp meringue powder
  • 2 tsp water
  • 1-2 drops white food coloring

Embellishments

  • fondant bats/fondant scarfs
  • edible wafer paper snowflakes
  • black sanding sugar
  • sugar sprinkles
  • various Christmas sprinkles
  • edible adhesive

Instructions

Chocolate Sugar Cookies

  • With a stand mixer, cream butter and sugar. Then mix in egg and vanilla. Combine dry ingredients in a small bowl and then add to the butter mixture and mix until a soft dough forms. The dough shouldn't be sticky, if it is, add a tablespoon or two of additional flour. Roll dough into a ball and wrap with plastic wrap and refrigerate for about an hour. .

Sugar Cookies

  • With stand mixer, cream butter and sugar until fluffy. Add egg and vanilla and beat until incorporated. Combine dry ingredients and add in two additions and mix until the dough releases from the bowl. This dough will not be sticky, but if it is add a tablespoon of flour one at a time until the dough reaches playdough consistency. Wrap in plastic wrap and chill for minimum of 2 hours or overnight. It can be frozen for up to 6 months.
  • Preheat oven to 350°. Mold cookies by pressing dough into the mold. Use a rolling pin or a coffee mug to work the dough into the mold to give a smooth bottom. Unmold onto parchment paper lined cookie sheet by peeling mold away from cookie dough slowly. Bake 10-12 minutes.
  • Abominable Snow Miser:
    Fill hangable skull mold with chocolate cookie dough, unmold and bake 10 minutes, cool completely before decorating.
    Make a mixture of meringue powder, water and white food coloring. Add 2 tsp of water to 1 tsp. of meringue powder and let it sit until the meringue powder absorbs the water. Add more water if needed to get the consistency of paint. Add a small squeeze of white food coloring. Apply with a small paintbrush to the skull cookie and let dry. Roll out white fondant and cut out a triangle and stretch it and fold over to make a Santa hat and place on skull. Add snowflakes, nonpareils and eyes and affix with edible adhesive.
  • Jack Frosty:
    Fill mold with alternating red and white cookie dough, unmold and bake 10 minutes, cool completely before decorating. Paint edible adhesive into the face and hat details of the jack-o-lanterns(JOL) and sprinkle black sanding sugar into them. Allow to dry and use a soft paint brush to remove loose sanding sugar. Roll out small rope of fondant and place around neck of the JOL. (Optional: Use a fondant mold to create a sweater like pattern) Adorn with sugar sprinkles and edible snowflakes.
  • Oh Creepmas Tree:
    Fill mold with sugar cookie dough and the trunk of tree with red cookie dough, unmold, bake for 10 minutes, cool completely before decorating. Paint tree with meringue and water mixture and sprinkle with sugar sprinkles. Add wafer paper snowflakes, adorn with red nonpariels and allow to dry.
