I don’t know about you guys, but I’m ready for 2023 to come to an end. It’s been quite a doozy of a year for me and I’m anxious for things to get a little easier than they’ve been. I had planned to just relax and not start a new theme, but the reality for me is that I’m happiest when I’m busy with a project, so the Creepmas theme was a welcome distraction to focus on something for me. An opportunity to create and play with my imagination. I have a full menu of recipes ideas for this theme, however I may not finish them before the end of the year but I will do my best to post them once they are done. If you know anything about me and all my Halloween themes, I can’t do a theme without a salad, so here’s an easy salad idea that’s… To Endive For. 💀🖤😁

To Endive For

Endive, pears, nuts, cheese skulls, edible snowflakes and pomegranate honey drizzle makes this Creepmas Tree Salad...To Endive For!

Ingredients

  • 4 heads endive lettuce spears
  • 1 package herbed goat cheese or Boursin cheese
  • 2 medium pears, peeled and diced (add lemon juice to prevent browning)
  • ½ cup walnuts or pecans, chopped
  • ½ cup pomegranate arils
  • cup honey (plus 2 tablespoons pomegranate juice)

Instructions

  • Spread goat cheese into small silicone skull mold and freeze for a minimum of 1 hour or overnight. Keep frozen until ready to assemble salad. Cut end of endive head and separate into leaves. Wash and spin dry. Arrange leaves into a Creepmas Tree on a large platter. Add pears, nuts, cheese skulls and pomegranate seeds. Drizzle with pomegranate honey and enjoy!
