Queso Contagion

Here’s a simple appetizer of open-faced mini quesadillas that’ll cure your cravings for Halloween fun. For our Mad Scientist Mexican food inspired menu, I made these virus-shaped tortillas topped with salty cotija cheese, pan-fried to a golden crust and served with fun guacamole syringes. If I were throwing a big party, I’d set up an ‘Extract your Own Contagion’ Bar!  Set up an electric griddle, squeeze bottle of oil for frying, a bunch of contagion shaped tortillas(in different colors and flavors), cotija crumbles, jalapenos, and lots of syringes full of guacamole, crema, and salsa to let your guests be a Mad Scientist! They can experiment on contagions by inoculating them with their own combination of syringe toppings. Imagine all the fun possibilities. Enjoy!

Queso Contagion

Cure your cravings for Halloween fun with virus shaped quesadillas made with salty cotija cheese and served with syringes of guacamole.

Equipment

  • 4" and 4.25" virus cookie cutters (see recipe note)

Ingredients

  • 6 large Flour tortillas (any color-I used green tortillas) cut into 4 virus particles each
  • canola oil for frying
  • 1 cup crumbled cotija cheese
  • Serve with guacamole, salsa, and crema (I served them in plastic syringes)

Instructions

  • Cut out 4 virus particles from each large spinach tortilla to make 24 virus tortillas.
    A simple way to get the cutter through the tortilla is by laying the tortilla on top of the cutter and use a rolling pin to roll over the tortilla until the shape is cut through the cutter. (See video below)
  • Use a large fry pan over medium high heat, add oil to hot pan and place 3-4 virus tortillas into the pan. Sprinkle tortillas with about ½-1 teaspoon of cotija cheese crumbles and let it fry for about 1-2 minutes. Flip virus tortilla over, cheese side down and let the cheese brown for about 30 seconds. Remove from heat and serve with guacamole syringes.
  • Note: Use well blended guacamole and salsa to fill up plastic syringes. Tap the syringe so that all the guacamole is on one side of the syringe so that when you replace the plunger, the air can escape. It'll be a bit messy. Store syringes in the refrigerator until ready to serve.
