Pickled Pentagrams

I realize my pentagrams are missing the intersecting lines that define the symbol, but it’s the idea of it afterall. My next theme is going to be all things Witchy and Wonderful so I created this dish around the magical wiccan symbol, the pentagram. I love how they turned out and the pink hues created  from the red onions and red wine vinegar really give them a beautiful mystical feel, don’t you think?

I love pickled onions, they are so incredibly delicious, I make them all the time and add them to salads, hamburgers, hot dogs, tacos, turkey sandwiches, eggs, bagels, avocado toast…you name it. Anywhere regular onions go, substitute these little gems and your meal will be transformed into something deliciously magical. Sure cutting them into stars takes a little extra effort, but that’s the fun of it. Make them into stars for special events, or make just them with sliced onions for everyday use, either way they taste amazing. Enjoy!

Pickled Pentagrams

Star-shaped pickled onions add a fun bit of magic to any dish. Add them to salads, sandwiches, hamburgers, tacos, eggs, avocado toast and more.

Equipment

  • mini star cookie cutters

Ingredients

  • 1 large red onion
  • 1 medium yellow onion
  • cups water
  • cups red wine vinegar
  • cups sugar
  • ¼ cup kosher salt
  • 1 tbsp red pepper flakes

Instructions

  • Cut onions into quarters, trim both the ends and peel off papery outer layer. Separate the onion layers and punch out stars using a star cookie cutter. Cut out about 3 cups of stars. Reserve left-over onion scraps to use in another recipe or freeze.
  • In a small saucepan, add water, vinegar, sugar, salt and red pepper flakes and bring to a boil. Boil for 5 minutes.
  • Clean a 1 quart mason jar, lid and ring and set aside. Add onion stars and fill the mason jar with boiling liquid. Place lid and ring over filled jar and hand tighten.
  • Let cool to room temperature and then place them in the refrigerator and allow onions to pickle for 2-3 days and Enjoy!
    Note: These onions are quick pickled and not canned, so they must be stored in the fridge. Can be stored in the refrigerator for about 10 days.
