Hell Broth

When I think of classical Halloween witches, I think of Shakespeare’s Macbeth.  Three witches in a dark cave, huddled around a bubbling cauldron, whispering incantations as they add things like eye of newt, toe of frog and tongue of dog to create “a charm of powerful trouble, like a hell-broth boil and bubble.” That scene has such incredible imagery it’s no wonder that it’s a classic.  So, not wanting to skip a chance to make something classically witchy for my Witchy and Wonderful theme, I made a jazzed up vegetable miso soup with fun tofu eyeballs, deadly nightshade leaves a.k.a. baby bok choy, death-cap mushrooms, and creepy crawling nori spiders to make a spooky Hell Broth. Enjoy!

Hell Broth

A charm of powerful trouble like a hell-broth boil and bubble. A simple miso soup with tofu eye of newt, death-cap mushrooms and nori spiders.

Equipment

  • Spider paper punch
  • hole punch
  • ½-inch paper punch

Ingredients

  • 8 cups dashi broth
  • ½ cup wakame seaweed
  • 3 baby bok choy, halved or chopped
  • 5 oz. baby bella mushroom skulls, halved
  • 5 tbsp. miso paste
  • 24 silken firm tofu eyeballs 24-each of: ½" circles of green soy paper irises and hole-punched nori sheet pupils
  • green onions
  • nori spiders (garnish)
  • enoki mushrooms (optional)

Instructions

Tofu Eyes of Newt

  • Use a ½ teaspoon to cut out balls of firm silken tofu, 12 from each side. Reserve remaining tofu for another recipe, like potstickers.
    Punch out 24 circles of green soy paper with a ½" paper punch. Punch out 24 pupils from nori sheets with a standard paper punch.
    Place nori pupil to flat side of each tofu eyeball. Add Green soy paper iris on top of the pupil. Set aside.
    Note: The irises and pupils will not stay intact once submerged in the soup. They are just for the spooky effect, so add them to the floating bok choy right before serving. Enjoy!

Death-cap Mushroom Skulls

  • Use a straw to make skull eye sockets and a paring knife to make small cuts for the nose holes. Scrape down the stem with a toothpick to mimic teeth. Repeat on the other side of the mushroom so that each whole mushroom when cut in half, gives you two mushroom skulls.

Spider confetti

  • Punch out spiders out of Nori sheets using a spider paper punch.(see recipe note where to get one.)

Miso Vegetable Soup

  • Prepare all vegetables, tofu and garnishes and set aside.
  • Over medium high heat, bring Dashi Broth and wakame seaweed to a boil. Turn heat down, add bok choy and mushrooms and allow vegetables to simmer in hot Dashi for about 5-8 minutes. Add miso paste and stir. Serve in individual bowls and place the tofu eyeballs on the bok choy so that they stay afloat. Garnish with a few nori spiders and green onions and eat!
