Spiderling Cake

It feels so good to be back working on my blog after nine months of doing nothing but testing, tweaking, and dreaming about cookbook recipes. Don’t get me wrong, it was an amazing experience, but creating without the looming pressure of deadlines…is a huge relief! This Spiderling Cake was inspired by my friend Chelsea from Cheerswithchelsea Not only is she one of the sweetest people you’ll ever meet, but she’s a die-hard arachnophile. Seriously, if there were a royal title for spider enthusiasts, She’d be the Spider Queen!  One look at her website you’ll see how she’s woven her love of spiders into every corner, cobwebs included. Every April, she hosts, Be Kind to Spiders Week, sharing fun spider themed activities, like an annual picnic with spider-inspired treats and decorations, along with interesting spider facts. My Spiderling Cake is my contribution to her annual festivities and trust me, this easy cake is sure to get the spidery-vibes going. It’s an easy frosted dome cake, topped with white cotton candy to mimic a fluffy egg sack (eek!) and swarming with an army of edible spider cupcake toppers that will make your guests’ skin crawl…in the best possible way! Make sure you sign up to get Chelsea’s Gossamer Gossip Newsletter and make sure to give her a follow on social media!🕷🕷🕷

Equipment

Ingredients

  • 2 cups all purpose flour
  • cups sugar
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp salt
  • 2 large eggs
  • 1 cup sour cream
  • ½ cup butter, softened
  • ½ cup water
  • 2 tsp. vanilla extract
  • 1 bag white cotton candy
  • 1 Spider cupcake toppers

Frosting

  • 12 oz cream cheese, room temperature
  • 8 oz. butter, room temperature
  • 2 tbsp. vanilla extract
  • 8 cups powdered sugar, sifted
  • 2 tbsp. whipping cream

Instructions

Easy Vanilla Dump Cake

  • Preheat oven to 350℉. Spray 2, 8-inch dome cake pans with cooking spray and add strips of parchment to the pan for easy removal.
  • Mix all ingredients in a large bowl and beat on low for about 1 min and scrape down sides of the bowl. Beat on high with a hand mixer for 2 minutes. Pour batter evenly into pans. Bake for 30-35 minutes until a toothpick comes out clean from the center. Cool for 10 minutes and turn out of pans and allow to cool completely.

Frosting

  • Add cream cheese, butter, and vanilla extract to a stand mixer with a paddle attachment and beat until fluffy. Add powdered sugar slowly and beat until incorporated. Add whipping cream and beat until incorporated. Set aside.

Assembly

  • Trim the flat sides of the two dome cakes and frost one side generously with frosting. Top with the frosted dome with the other dome to create a sphere. Frost the whole cake with frosting. Chill cake until ready to serve.
Note: Cotton candy will shrink up as it sits in air, so make sure to only apply the cotton candy to the cake right before you are ready to serve it.
Tear off small tufts of cotton candy and stick them into the frosting to mimic a spider egg sack. Top with a swarm of edible spider cupcake toppers and serve immediately.
