Pink n' Be Berry

Equipment

  • jack-o-lantern candy mold (see recipe note)
  • 6 small plastic cups

Ingredients

  • 3 envelopes unflavored gelatin
  • ½ cup cold water
  • 1 cup boiling water
  • 1 4 oz. strawberry flavored gelatin
  • ½ cup vanilla vodka
  • ½ cup cream

Instructions

  • Add 3 envelopes of unflavored gelatin to cold water and allow the gelatin to bloom for about 10 minutes.
    Add strawberry gelatin to 1 cup of boiling water and stir until dissolved. Add vodka. Add the bloomed gelatin and stir until dissolved.
    Reserve approximately ½ cup of the strawberry gelatin and set aside. (this will be used to fill in the jack-o-lantern face)
    Add the cream to the rest of the strawberry gelatin mixture until it turns pink.
  • Spray the jack-o-lantern mold generously with cooking spray. Fill each mold with the pink gelatin mixture and then pour evenly into the small plastic cups. Chill until set.
  • Take a butter knife and run it around the outside of each jack-o-lantern mold. Gently work the Jell-O-lanterns out of the mold keeping it turned upside down to allow gravity to help loosen them. Place each Jell-O-lantern on top of the jello in each small plastic cup.
    Reheat the reserved red gelatin mixture in the microwave for about 20 seconds, add more time if needed. Use a plastic syringe to fill in the face of the jack-o-lanterns or use a spoon to carefully fill in the face. Chill to set and enjoy responsibly.
