Cut one end of the wrapper to create a straight edge. Lay brie candle along straight edge of mozzarella slice and roll up. (You can also cut the mozzarella at the top if you want. I left it uncut so I would have a little room to adjust it if it rolled uneven, but feel free to cut both the top and bottom at this point.) Add a second slice, overlapping the rounded sides. Use a knife to cut through the overlapping slices to create a seam. Remove sliced pieces and then press together a perfect seam, pressing it into the cream cheese glue. Repeat with the third slice until brie is covered. Use a sharp knife to trim the top of the mozzarella cheese and press into cream cheese. Add more as needed to get a good seal.
